Chicken Skewers

Ingredients (for 2ppl):

Main Ingredients:

  • 4 boneless chicken thighs
  • 2 tbsp freshly squeezed lemon juice
  • 1 tbsp lemon zest
  • 1 tsp paprika
  • 2 tsp dried oregano
  • 1 tsp dried thyme
  • 1 tsp salt
  • Freshly ground black pepper
  • 3 cloves of minced garlic
  • 1/2 an onion
  • 1 red onion
  • Vegetables of your choice, pepper, courgette etc

Goes Well With:

  • Couscous
  • Chips

Utensils:

  • Bamboo skewers

Instructions

Marinade (20mins - 8h before serving):

  1. Chop the 1/2 an onion, garlic, juice a lemon and get herbs ready
  2. Chop chicken in to 3cm cubes and put in to a medium bowl
  3. Add olive oil, lemon juice, lemon zest, paprika, oregano, thyme, garlic, onion, salt and pepper.
  4. Cover and put in the fridge (8h)

Preperation (50mins):

  1. Soak the bamboo skewers in water for 30 minutes
  2. Meanwhile, chop the red onion and vegetables in to squares
  3. After soaking, thread the skewers as desired and brush with extra oil

Cooking (12mins):

  1. Turn on the grill to 200°
  2. Once hot, place the skewers in for 10 minutes, turning half the way through (10 mins)
