Real Chicken Soup

Ingredients (for lots):

Main Ingredients:

  • 2 packs of giblets
  • 1 pack of turkey necks
  • 3 x onions
  • 4 x carrots

Gibblets:

Matzah Balls (16):

  • 115g Matzah Meal
  • 1 egg
  • 2 tbsp ground almonds
  • 1/4 tsp powdered cinnamon
  • 1 tbsp chicken fat
  • 230ml luke warm water
  • 1 tsp salt

Utensils:

  • Big saucepan

Instructions

Soup (4 hours):

Needs to be made the day before

  1. Chop all ingredients and put into a pot
  2. Cover with water (till the 5l mark)
  3. Bring to the boil, then simmer on low for 4 hours with lid on, but open letting steam out
  4. Fill up to 5l mark with boiling water
  5. Strain, take out the bits of chicken not wanted and throw away, put the rest back in the soup
  6. Put in fridge overnight
  7. Next day skim off fat from the top and discard, ready to heat up and serve (with pasta)

Matzah Balls (20 mins + 15 mins):

Needs to be made the day before

  1. Beat the egg in a large mixing bowl
  2. Add almonds, cinnamon, fat and salt and mix together
  3. Add water and mix
  4. Gradually add Matzah meal and mix in
  5. Put into the fridge and cover overnight
  6. Take out, roll into balls, dip hands in water so it doesn’t stick
  7. Boil water with a little bit of salt, simmer for 15 mins and cover in fridge
  8. Steam for 5 mins before adding to soup
