Chicken Stew

Ingredients (for ---ppl):

Main Ingredients:

  • One pack of chicken thighs (about 600g)
  • 10g dried porcini mushrooms
  • A splash of red wine
  • A can of peeled tomatoes
  • 1 onion
  • 1 large carrot
  • 2 pieces of celery
  • 1 clove of garlic
  • 1 sprig of Rosemary
  • Parsley optional at the end

Goes Well With:

  • Rice
  • Seasonal Vegetables

Utensils:

  • Le Creuset

Instructions

Prepare (10min):

  1. Let the porcini mushrooms soak in room temperature water

Cooking (30min):

  1. In the le creuset pot add some olive oil. Once hot, brown all the sides of the chicken, letting it cook for about 5 minutes - then remove
  2. Chop the onions, carrot and celery finely, peel the garlic and add it all to the pot
  3. After a minute add the rosemary and the mushrooms (squeeze the water out of them).
  4. Add the chicken back in, add a splash of red wine and let it all cook for 5 minutes
  5. Add the tin of tomatoes, cover and let it cook for 15-20 minutes (depends on how thick the thighs are).
  6. After this time the sauce will be still liquid, so if you want a thicker stew lift the lift halfway through cooking.
