Egg Fried Rice

Ingredients (for 2ppl):

Main Ingredients:

  • 250g long grain rice
  • 500ml of water
  • 1 egg
  • 1tbls soya sauce
  • Spring onion

Instructions

Prepare (30min):

  1. Cook rice as per "Boiled Rice" and leave to cool

Cooking (15min):

  1. Add oil to a saucepan on high heat
  2. Pour beaten egg into frying pan, stir for 30 seconds
  3. Pour cold boiled rice in, fry for 6 minutes, pressing out any lumps
  4. Add salt, white pepper, soya sauce and stir fry for 2 more minutes
  5. Sprinkle chopped spring onions on top
