Green Risotto

Ingredients (for 2ppl):

Main Ingredients:

  • 160g of risotto rice
  • 1 leek
  • 100g of chard
  • 50g of spinach
  • 1 garli
  • 10g Parmesan
  • Splash of white wine
  • 400ml vegetable broth

Utensils:

  • Wok
  • Blender (soup one)

Instructions

Prepare (2min):

  1. Wash and chop all the vegetables (remove most of the green stalk of the leek, keep leek seperate)

Cooking (38min):

  1. Heat up wok with some olive oil, add the leeks, 100ml of broth, cover and simmer (15 mins)
  2. Blend the leeks to a puree with the soup blender (2 mins)
  3. Add back in the pan the puréed leeks, with spinach, garlic and chard and cook (5 mins)
  4. Add the risotto rice, a splash of white wine and let evaporate (2 mins)
  5. Add the remaining broth and cook (18 mins)
  6. Add the parmesan two minutes before the end of the rice cooking time and stir
