​Sausage casserole

Ingredients (for 4ppl):

Main Ingredients:

  • 12 x Cumberland Sausages
  • 6 x Shallots
  • 3 x Carrots
  • 2 sticks of Celery
  • Pack of Pancetta
  • Pack of Chestnut Mushrooms
  • 20 cherry tomatoes
  • Small bunch of Thyme
  • 2 x Bay Leaf
  • Chicken Stock Cube in 300ml of water
  • Splash of red wine

Goes Well With:

  • Rice
  • Seasonal Vegetables

Utensils:

  • Ovenproof pot

Instructions

Prepare (5min):

  1. Dice shallots, carrots, mushrooms and half the tomatoes
  2. Poke holes in all the sausages
  3. Preheat oven to 175 degrees

Cooking (1h 10m):

  1. Oil the saucepan and fry sausages, turning frequently until the outsides are brown, remove sausages (4 mins)
  2. Fry shallots, pancetta and mushrooms into the same saucepan and stir (4 mins)
  3. Add carrots, tomatoes, celery, stock, wine and herbs
  4. Cut the sausages in half and put back in to the saucepan, stir quickly and put in the oven for 1h on 175 degrees
