Seared Pork Steak


Ingredients (for 2ppl):

Main Ingredients:

  • 2 x pork steaks
  • 500ml of water (200ml boiled)
  • 25g kosher salt (per 500ml water)
  • 1 cloves of garlic
  • A pinch of black pepper

Goes Well With:

  • Roasted Potatoes
  • Seasonal Vegetables


  • Ovenproof skillet


Brine (5 mins):

Porks in brine should be made 30 mins to 4 hours before

  1. Boil the kettle and pour 200ml water into a jug, mix in salt, flattened garlic and pepper, once the salt is disolved add in 300ml of cold water
  2. Put steaks into a shallow dish and pour in brine makeing sure the steaks are totally covered (top up with cold water if needed), put in the fridge for between 30mins and 4 hours

Prepare (2mins):

  1. Turn oven to 200 degrees
  2. Take steaks out of brine and pat dry, add a drizzle of extra virgin olive oil to both sides

Cooking (15min):

  1. Heat up a skillet to high medium high heat and put steaks in for 3 minutes, just on one side, do not move in the pan
  2. Flip steaks over and immediately put into the oven, depending on thickness, for 6-10 minutes (till internal temprerature reaches 60 degrees)
  3. Take out of oven, put on a board and cover with foil and cloth for 5 minutes to keep warm
