Chicken & Spinach Burgers

Ingredients (makes 7 burgers):

Main Ingredients:

  • 500g chicken mince
  • 200g spinach
  • 1 egg
  • 20 g parmesan
  • salt
  • ground nutmeg
  • Golden breadcrumbs

Goes Well With:

  • Home-made chips
  • Seasonal Vegetables

Utensils:

  • Oven proof tray
  • Blender
  • Frying pan

Instructions

Prepare (40mins):

  1. Cook the spinach in a pan with a bit of olive oil, strain and squeeze out the water (5 mins)
  2. Put the spinach in a blender with a pinch of salt and blend (1 min)
  3. In a large bowl, add the blended spinach, mince chicken, one egg, all the parmesan, salt and a pinch of nutmeg, mix with your hands and slowly add some breadcrumbs, depending on how wet the dough is (1 mins)
  4. Add the remaining breadcrumbs in another shallow bowl, make the patties with your hands, and then drop them in the breadcrumbs (3 mins)
  5. Leave to rest in the fridge before cooking (30 mins)

Cooking (20-30mins):

  1. From chilled: Cook in a pre heated oven at 200° (20 minutes)
  2. From frozen: Cook in a pre heated oven at 200° (30 minutes)
