Superfood Salad

Ingredients (for 2ppl):

Main Ingredients:

  • 2 x salmon steaks
  • 2 x uncooked beetroots
  • 8 x generous handfuls of baby spinach
  • 4 tbls crumbled feta
  • 4 tbls pine nuts
  • small pack of asparagus
  • 1 x avocado

Sauce:

  • 2 tbsp butter
  • 2 tbsp balsamic vinegar
  • 2 clove of garlic, minced
  • 2 tsp Dijon mustard
  • 2 tbls of olive oil

Utensils:

  • Ovenproof tray

Instructions

Prepare (5min):

  1. Preheat oven to 220 degrees
  2. Peel and slice beets, toss in oil, salt and pepper and lay on ovenproof tray with asparagus
  3. In a small bowl whisk all the sauce ingredients together

Cooking (25min):

  1. Put beetroots/asparagus tray in the oven for 20 mins
  2. 5 minutes before beetroots are ready sear Salmon for 2 minutes each side in a hot frying pan
  3. Throw all salad and half the sauce into a bowl, toss
  4. Add salmon, beets, pine nuts, crumbled fetta and remaining sauce
