Caprese

Ingredients (for 6ppl):

Main Ingredients:

  • 200g white skinless almonds (can boil for 1min and remove skins)
  • 150g of 70% chocolate
  • 200g unsalted butter at room temp
  • 4 eggs
  • 180g sugar (90g x 2)
  • Optional berries

Utensils:

  • Baking dish 20cm round
  • 2 bowls
  • Saucepan and glass bowl

Instructions

Prepare (2min):

  1. Turn oven to 200°
  2. Separate yokes and white into seperate bowls
  3. Grease a 22cm baking tray

Cooking (1h 20mins):

  1. Toast almonds in 200° (10 mins)
  2. Let cool down fully and then blend in electric mixer (10 mins)
  3. Turn oven to 175°
  4. Melt chocolate in a glass bowl steamer (5 mins)
  5. In the yoke bowl add 90g sugar, all the butter, the melted chocolate and almonds and mix with electric mixer
  6. In the whites bowl add the other 90g of sugar and mix with electric mixer until moose
  7. Fold whites bowl into yokes bowl carefully to not let out air
  8. Pour mixture into baking tray and put in 170° oven (30 mins)
  9. To check if cooked, use the normal knife test
  10. Let it cool down and icing sugar/berries on top (30 mins)
