Courgette Soup

Ingredients (6-8 portions):

Main Ingredients:

  • 4 large courgettes
  • 1 large onion
  • 1 chicken stock cube
  • 1 heaped tablespoon of Philadelphia cheese (pref garlic and herb version)

Utensils:

  • Large Saucepan
  • Electric blender

Instructions

Prepare (2min):

  1. Cut off the ends to the courgettes and then slice into 1cm thick slices
  2. Cut onion into large chunks
  3. Boil a kettle

Cooking (50min):

  1. Put the courgettes, onion, crumble chicken stock cube and heaped tablespoon of Philadelphia cheese into the saucepan and fill with water so it just covers the top of the courgettes
  2. Let simmer for 45 minutes with a lid mainly on (at a slight angle to let some steam out)
  3. Take off the heat, blend and add any salt/pepper/chinese 5 spice as you like for flavour
