Creamy Chicken Bacon

Ingredients (for 4ppl):

Main Ingredients:

  • 4 x chicken thighs/breasts
  • 1 tbls olive oil
  • 2 tbsp italian seasoning

Sauce:

  • 1 tbsp olive oil
  • 225g mushrooms
  • 6 slices of bacon
  • 1 cup of heavy cream
  • 1 crushed garlic
  • small bunch of fresh thyme

Goes Well With:

  • Roast Potatoes
  • Seasonal Vegetables

Utensils:

  • Ovenproof skillet
  • Frying pan

Instructions

Best if chicken is brined (45mins - 4 hour before)

Prepare (2min):

  1. Chop mushrooms
  2. Heat oven to 180°

Cooking (30min):

  1. Heat a skillet to high heat and cook chicken 2 minutes each side to brown sprinkling some italian seasoning on
  2. Put skillet in the oven for 20 minutes
  3. Fry bacon until crisp, dry with a kitchen towel and cut into small pieces, set aside
  4. Bring chicken out of oven, take chicken out of pan, set aside and cover
  5. Add to the skillet with chicken juices some olive oil and mushrooms for 2-3 minutes
  6. Add the bacon, cream, crushed garlic, thyme and some salt and pepper, bring to simmer and reduce for 5 minutes
  7. Add chicken back in skillet for 2 mintues with sauce and serve
