Lamb Casserole

Ingredients (for 6ppl):

Main Ingredients:

  • 1.5kg boneless shoulder or leg of lamb
  • 50g flour
  • 100g pancetta
  • 1 large onion
  • 6 medium carrots
  • 4 large celery sticks
  • 4 cloves of garlic
  • 1 tbsp fresh rosemary
  • 100ml of red wine
  • 400ml pasata
  • 750ml of chicken stock
  • 3 bay leave

Goes Well With:

  • Cardomon rice
  • Seasonal Vegetables

Utensils:

  • Dutch oven

Instructions

Prepare (3mins):

  1. Dice lamb into 3cm chunks
  2. Slice onion, carrots, celery sticks and chop rosemary
  3. Pour flour into a large mixing bowl and add lamb

Cooking (95mins):

  1. Fry the lamb in a little olice oil and set aside (5 mins)
  2. Fry the pancetta (2 mins)
  3. Add onion and cook (5 mins)
  4. Add carrots, celery and cover (5 mins)
  5. Uncover, add garlic and rosemary and cook (1 min)
  6. Pour the remaining flour into the veg, pasata, stock, wine and bay leaves and stir
  7. Return the lamb to the pot, part cover and simmer, stir occasionally (75 mins)
  8. Take out the bay leaves and serve
