Saffron Rice

Ingredients (for 2ppl):
Main Ingredients:
- 120g basmati rice
- 1/2 an onion
- Half a vegetable cube (Double the volume of rice in water minus 50ml)
Instructions
Prepare (5min):
- Dice onion into small cubes
- Boil the kettle
Cooking (25min):
- Put some oil and the onions into a saucepan and sauté (5mins)
- Meanwhile, grind a tiny bit of safron in a mortal and pestle, then add 50ml of luke warm water and stir
- Add the rice and season with salt and stir (1min)
- Add the stock, stir to mix it all up
- Turn down to low heat, put a lid on and cook (18mins)
- Leave to rest for a couple mins
