Saffron Rice

Ingredients (for 2ppl):

Main Ingredients:

  • 120g basmati rice
  • 1/2 an onion
  • Half a vegetable cube (Double the volume of rice in water minus 50ml)

Instructions

Prepare (5min):

  1. Dice onion into small cubes
  2. Boil the kettle

Cooking (25min):

  1. Put some oil and the onions into a saucepan and sauté (5mins)
  2. Meanwhile, grind a tiny bit of safron in a mortal and pestle, then add 50ml of luke warm water and stir
  3. Add the rice and season with salt and stir (1min)
  4. Add the stock, stir to mix it all up
  5. Turn down to low heat, put a lid on and cook (18mins)
  6. Leave to rest for a couple mins
