​Sausage casserole


Ingredients (for 4ppl):

Main Ingredients:

  • 12 x Cumberland Sausages
  • 6 x Shallots
  • 3 x Carrots
  • 2 sticks of Celery
  • Pack of Pancetta
  • Pack of Chestnut Mushrooms
  • 20 cherry tomatoes
  • 350g of Pasata
  • Small bunch of Thyme
  • 2 x Bay Leaf
  • Chicken Stock Cube in 300ml of water
  • Splash of red wine

Goes Well With:

  • Rice
  • Seasonal Vegetables


  • Ovenproof pot with lid


Prepare (30min):

  1. Dice shallots, carrots, mushrooms and half the tomatoes
  2. Poke holes in all the sausages
  3. Preheat oven to 175°

Cooking (1h 20m):

  1. Oil the saucepan and fry sausages, turning frequently until the outsides are brown, remove sausages (4 mins)
  2. Fry shallots, pancetta and mushrooms into the same saucepan and stir (4 mins)
  3. Add carrots, tomatoes, celery, stock, wine, pasata and herbs and stir (4 mins)
  4. Cut the sausages in half and put back in to the saucepan, stir quickly, put on the lid and put in the oven (1h)
