Sausage Ragu

Ingredients (for 2ppl):

Main Ingredients:

  • 4 pork sausages
  • 1 small onion
  • 1 small carrot
  • 1 stick of celery
  • 1 garlic
  • 100ml of wine
  • 500g pasata
  • A few basil leaves

Goes Well With:

  • Fresh Pasta
  • Salad

Utensils:

  • Saucepan

Instructions

Prepare (5min):

  1. Peel onion and carrot and cut in half
  2. Peel garlic

Cooking (4h 20min):

  1. Add a tiny bit of olive oil to a saucepan and fry the garlic (1min)
  2. Remove skin of sausages and crumble into pan, slowly so they don’t stick together (5mins)
  3. Fry sausages and stir till brown (5mins)
  4. Add wine and simmer (5 mins)
  5. Add 500g pasata, carrot, onion, celery and basil and stir
  6. Bring to the boil and then turn down to simmer and put a lid fully on, stir every 30 mins (3 hours)
  7. Set the lid to be partially open to let some steam out (1 hour)
