Sourdough Scones

Ingredients (4 scones):

Main Ingredients:

  • 160g self raising flour
  • 40g cold butter cut into small cubes
  • A pinch of salt
  • 40g caster sugar
  • 100g sourdough starter
  • 30ml milk + a splash
  • 1 tsp vanilla extract

Utensils:

  • 2 bowls
  • Baking tray

Instructions

Prepare (15min):

  1. Preheat oven to 200°
  2. Line a baking tray with baking parchment
  3. In the first bowl, place the flour, salt and butter and rub together with fingertips until butter lumps have gone
  4. Add sugar and mix
  5. In the second bowl, mix sourdough starter, milk and vanilla extract
  6. Pour the second bowl into the first bowl and use a round ended knife to work the mixture together (the aim is to have a soft slighty sticky dough, don't overwork)
  7. Tip out the dough onto the floured surface and flatten it out with your hands until minimum of 3cm thick
  8. Dip your round cutter in flour and cut out your scones (press cutter down and don't twist)

Cooking (15min):

  1. Place on baking tray, brush with a little milk on the top and sides, place in the oven (12-15 mins until golden brown)
