Sushi

Ingredients (for 2ppl):

Rice:

  • 250g sushi rice
  • 75ml sweetened sushi vinegar
  • 1 tsp salt

Everything else:

  • Fish
  • Nori
  • Seaweed salad
  • Toasted sesame seeds
  • Cucumber
  • Crab sticks
  • Pickled ginger

Instructions

To defrost the fish, take out of any packaging, wrap in a few paper towels and put on a plate in the fridge covered in cling film for 24h

Prepare & Cooking the rice (1.5h):

  1. Wash 250g of sushi rice 4 times until the liquid is fairly clear (2 mins)
  2. Soak the rice in water (30 mins)
  3. Drain and then add rice and 250ml of water to a pot
  4. Bring the pot to a boil (with the lid on - 3min 30sec)
  5. Turn heat down low (8 mins)
  6. Turn heat off and take off the stove (20mins)
  7. A good time to toast some sesame seeds and prepare the cucumber/fish etc
  8. Meanwhile, disolve the salt in the rice vinegar
  9. Empty rice in to a large shallow bowl, pour rice vinegar evenly over the top and mix (2mins)
  10. Leve for 10 minutes and then cover with a wet kitchen towel for a further 15 minutes (30mins)
