Vegetable Couscous

Ingredients (for 2ppl):

Main Ingredients:

  • 100g couscous
  • 200ml boiling water
  • 1/2 a chicken stock cube
  • 1 x red onion
  • Handfull of chestnut mushrooms
  • 1 x white courgette
  • 5 x baby sweetcorn
  • 5 cherry tomatoes
  • Extra virgin olive oil
  • Oregano

Utensils:

  • Wok
  • Bowl/measuring jug

Instructions

Prepare (3min):

  1. Boil and measure 200ml of water, add the 1/2 a stock cube and stir
  2. Chop all the vegetables

Cooking (15min):

  1. Heat up a pan with some extra virgin olive oil
  2. Add onions and fry for a minute or two
  3. Add all the rest of the vegetables, a little bit of boiling water, oregano and keep stiring for 10 minutes
  4. Just after add the couscous to the 200ml of stock water, stir, cover and leave to sit for 10 minutes
  5. When couscous is ready, fluff up and add to the wok and stir for 1 minute, then serve
