Venison Burgers


Ingredients (for 4 burgers - can freeze):

Burger Ingredients:

  • 500g venison mince (10% fat)
  • 100g of bacon rashers
  • 1 onion
  • Salt and pepper
  • 4 brioch buns
  • Grated cheddar (optional)

Caramelized onions:

  • 1 onion
  • 20g unsalted butter
  • Pinch of sugar
  • Pinch of salt

Goes Well With:

  • Homemade chips
  • Salad

Prepare (8min):

  1. Caramelised onions: Peel and slice the onion
  2. Burgers: Peel the other onion and grate, then squeeze out the liquid, add to the bowl
  3. Burgers: Cut up the bacon into tiny pieces, add to the bowl along with the venison mince
  4. Burgers: Mix thoroughly with hands and form into 4 patties - pressing a dip in the centre

Cooking (22min):

  1. Caramelised onions: Melt the butter in a medium heat saucepan and add the sliced onions, stir occasionally, sprinkle a pinch of sugar and salt after 10 mins (total cooking 20 mins)
  2. Burgers: Grate cheese if using
  3. Burgers: Start heating a skillet to medium high heat
  4. Burgers: Brush burgers with olive oil and salt and pepper just before putting in the skillet
  5. Burgers: Put burgers in the skillet and don't touch (4 mins)
  6. Burgers: Flip over, and if using cheese, put on top of burger now and cover skillet with lid (4 mins)
  7. Burgers: Take burgers out, put on a chopping board with some foil and cloth to rest (3 mins)
  8. Burgers: Toast the brioch buns in the burger skillet while the burgers juice (2 mins)
